Cooookie Mmonster

Recently Ive gone cookie mad and cant stop making them purely because they look so nice! Millie's cookies is up there as my no.1 favourite cookies but this recipe I came across on Vivianna does make ups blog is just up there with the top. There so quick and easy and they are the most amazing melt in your mouth biscuits you will ever eat.

All you need is 200g of unsalted butter, 300g caster sugar, 1 egg, 275g self raising flour, 75g coco powder and how ever much chocolate you want to use (a good way to get rid of those easter eggs)- I just used a bar of caramel chocolate and a plain dairy milk to give it a mix up, you might also need a splash of milk as it can be a once all added together little dry. 

First of all add your butter and sugar together and mix until its all creamy and soft (take my advise and give in to the electric whisk it saves so much time!!), then add in your egg and carry on mixing. Next you need to add your self raising flour (don't bother sifting), coco powder and your chocolate broken down into chunks. If you find the mixture is very dry go a head and add you splash of milk just to soften it a little bit. Find yourself two baking trays and place baking paper or tin foil on them to stop the cookies sticking, then grab your mixture and place it into balls onto the trays, make sure they are spread out as they will all melt together as one giant cookie. Once there in little balls flatten them down a little bit so then are more flat. Then pop them into a pre heated over on 220c or 200c for a non fan oven and leave them for 10 minutes (depending on your oven they may need a little longer). They will be all soft and sticky when you take them out so do not eat them straight away even though its ever so tempting!!! Leave them for a good half an hour to an hour so that they are perfectly soft and warm still, then go an head and indulge in the little babies.
